Pasta Salad

The other day, my friend was telling me about the way she prepares her pasta salad. She’s originally from Trinadad and Tabago and is a fantastic cook. Her great grandmother and mother taught her how to cook and with each meal she prepares, she manages to add her own spin to otherwise traditional meals. I always enjoy hearing what she is preparing and how she prepares it. She uses sweet corn, sweet peas, string beans, carrots and red onions. Then, she adds salt and pepper, mayo and mustard. She said she likes to add the mustard to the mayo to produce a bit of a tangy taste. To her, the combination of mustard and mayo creates harmony in her dish.
After talking to her, I wanted to make my own pasta salad. I scoured my fridge for vegetables and used the only pasta remaining in the pantry. I found and mixed brocolli, cherry tomatoes and corn. Next, I added a dash of Italian seasoning, salt, pepper, then added mayo and added a little Dijon mustard. Mmm! Loved it! Now, I’m mixing mustard and mayo, all the time! To top it off, because I like a touch of heat, to my pasta salad. Perfect!
It was fun making up my own pasta salad version.

My eyes focused on the corn kernels getting inside the pasta tubes. The vegetables make a colorful, cheerful salad.
