Cantaloupe salsa? Why not? I like mango salsa, mango and strawberry salsa, nectarine salsa… So, why not cantaloupe salsa? I bought a nice cantaloupe, the other day, and put this simple recipe together. And voila! My cantaloupe salsa was ready for devouring. It was really delicious and I served it over chicken. OMG! While I type this, I’m salivating as I remember my cantaloupe salsa. I think I’ll make it again this week.

Cantaloupe Salsa
Makes about 2 cups of salsa
2 cups diced (1/4 inch) cantaloupe (from a 2 1/4-lb piece)
1/4 cup diced (1/4 inch) sweet onion (such as Vidalia) or red onion
2 tablespoons chopped fresh basil or cilantro
1 (2-inch-long) fresh hot red or green chile (skip the seeds if you want to dim the heat), minced
2 tablespoons fresh lime juice
1/4 teaspoon salt
Mix everything and eat immediately.
New York Monday: After the Hurricane Storm

We survived Hurricane Irene. There was flooding, fallen trees and some power shortage. I’m lucky that my neighborhood wasn’t affected as badly as some other areas.

People slowly came out of their apartments to survey the damage.

People who had to walk their dogs came out first.

Garbanzo, Tomato, and Cilantro Salad with Lime and Chile Dressing

Garbanzo beans (chickpeas)! Tomatoes! Cilantro! Avocado! Need I say more? I had to make this salad when I saw it. This is another one of Kalyn’s fabulous recipes. Oh, man! I feel like I’m in heaven when I eat this salad.

Garbanzo, Tomato, and Cilantro Salad with Lime and Chile Dressing (with or without avocado)
(4 servings, recipe created by Kalyn with inspiration from a blog that no longer exists)
Ingredients:
1 can garbanzo beans (chickpeas), rinsed well and drained
4-5 tomatoes or 1 cup cherry or grape tomatoes, diced in 1/2 inch pieces
1/2 cup green onion, sliced
1 cup (1 large bunch) cilantro, washed, dried, and chopped coarsely with chef’s knife or food processor
1 avocado, diced (optional, but good)
Dressing Ingredients:
2 T fresh lime juice (plus 2 tsp. more for avocado, if using)
2 T extra-virgin olive oil
1/4 tsp. ground Chipotle chile powder (I used Penzeys, you could substitute hot sauce if you don’t have ground Chipotle)
1/2 tsp. chile powder (mild)
1/2 tsp. ground cumin
1/2 tsp. onion powder
zest from one lime
salt, fresh ground pepper to taste
Instructions:
Drain beans into colander and rinse until no foam remains. Let drain well. Mix together the lime juice, olive oil, ground Chipotle powder (or hot sauce), chile powder, ground cumin, onion powder, and lime zest to make the dressing, then put beans and dressing into a plastic container with a snap-on lid and shake a few times to combine. (Use a bowl that’s big enough to hold all the salad ingredients.) Let beans marinate in dressing one hour or longer.
If using avocado, peel and dice the avocado and toss it with 2 teaspoons of lime juice. Dice tomatoes, place in colander with a small amount of salt and let tomatoes drain 10 minutes while you dice onions and chop cilantro. (You can skip that step if using cherry tomatoes or if your tomatoes aren’t that juicy.) Thinly slice the green onions and wash, dry, and chop the cilantro.
Combine marinated beans with dressing, tomatoes, green onion, and cilantro and stir gently until well combined, then gently stir in the avocado (if using.) Season with salt and pepper to taste and serve.

Cranberry Muffins

Actually the title of the original recipe says “Raisin Muffins”. That is what caught my eye since I like raisins. I like muffins, too, but I avoid the ready-made/store-bought ones, since the ones I come across are normally filled with preservatives and who knows what else. It’s been a while since I’ve eaten a muffin and felt like eating a raisin muffin. However, I didn’t have any raisins in the pantry. <Pause for dramatic sigh> Instead, I had dried cranberries, which I’d bought earlier in the week for a salad recipe I made. Ugh! I didn’t like the cranberries in my salad. They didn’t enhance the taste of the salad. Since the dried cranberries were all I had, I decided to go for it. Boy, was I glad I did!
The recipe calls for soaking the raisins (“or any other kind of dried fruit that loves to be plumped”). So, I soaked the cranberries. What a big difference in the taste for me. They became succulent and I discovered that I liked the cranberries, after all!
Surprise!
I loved the taste of the cinnamon and nutmeg in the muffin!
Mmm!
I loved how delicious the muffins tasted straight out of the oven (I immediately ate two).
Yum!
The muffins tasted just as good, maybe even better, the next day.
Yum, yum, yum!
All in all, I think I’ll be making muffins more often.

Raisin Muffins
from Bake My Day!
Recipe:
1.1/2 cup water
1 cup raisins (or any other kind of dried fruit that loves to be plumped)
1 ts baking soda
1.1/2 flour
3/4 cup sugar
1/2 ts nutmeg
1 ts cinnamon
1/4 cup vegetable oil (4 tbs)
1 egg, somewhat whisked
- In a small saucepan get the water to a soft rolling boil, add raisins, turn down the heat and let simmer for 20 minutes.
- Drain, reserving the liquid!
- Add baking soda to liquid and stir to dissolve
- Combine and whisk dry ingredients, add raisins, give a quick stir
- Mix wet ingredients (reserved liquid, oil and egg)
- Add wet to dry and stir like any muffin batter; not too much, just until combined.
Using a muffin tin, bake these for approx. 20 minutes at 350F or 175C.
