I Liked it! I Really Liked It!

Sweet potatoes! Simply tossed with extra virgin olive oil, salt (or Veg-it), and chopped fresh herbs like Oregano, Marjoram, Rosemary and Thyme. Roasted at about 375°F till cooked and a little caramelized. And Viola! Ready for me to enjoy. I loved it!
I never liked sweet potatoes. While I found sweet potato pie okay (a little too sweet for me), I never cared for it. In general, I hated it, especially when it was served at Thanksgiving meals. Hated it. Okay, maybe I should say I never liked the way they were prepared.
Well, I finally liked this dish, based on a suggestion from Christine Cooks. Yay! I liked that it was simple to make. The taste was flavorful and enhanced by the fresh herbs. A really nice meal. Sweet potatoes will now be on my eating list.
A while ago, I mentioned that Lydia of The Perfect Pantry was looking for people to host the Drop In & Decorate® holiday event, where you and your friends, family, neighbors, co-workers (everyone/anyone) get together and decorate cookies (like a cookie-decorating party) then donate the cookies to places serving people in difficult circumstances during the holiday season — places like an emergency shelter, local food pantry, senior center. I can buy sweet potato here in Estonia now & I like to just bake it with a little olive oil also. I’ll have to try adding some herbs now that everything is green again.
Thank you so much for helping to spread the word about Drop In & Decorate — you’re an angel! And those sweet potatoes look absolutely heavenly, too. I never liked sweet potatoes when I was a kid, because they were always prepared with something sweet (sugar, honey, marshmallows). I love to roast them with thyme, olive oil, salt and pepper — and not a marshmallow in sight.
I’m totally with you on the lack of enjoyment of sweetened sweet potatoes, but this sounds like something I’d like too!
I’m so glad you finally found a way to enjoy sweet potatoes! I think they’re great, and this looks like a yummy new way to enjoy them. There’s a restaurant in Santa Fe that does the Best sweet potato fries… if you ever come out here you will have to try them!
I’m glad you’re branching out! You might also see if you can find french-fried sweet potatoes, and sweet potatoes done up as potato chips! Yum!

Sweet potatoes are up there among my favorite foods! These look so good!
During the years I did not know what foods I was allergic to, I was sure that sweet potatoes were a safe and filling food. I can not tell you how much comfort they gave me at times.
We like them in the skin, baked or cooked in the microwave, then opened like a baked white potato. I like salted butter on them, and herbs sound like a perfect addition (I have had mixed root veggies oven-roasted with olive oil and herbs and they were wonderful).
Sometimes when I go to a party where I know others will have much food to choose from, I slice baked potatoes in one inch rounds, microwave until tender, and put them in a plastic bag. I can eat them with my fingers if I am gentle, and it feels like I am being a bit spoiled.
I rarely add any sweetener to them unless I have them for breakfast. Then I add butter and drizzle a little blackstrap molasses on the sw. potato. Blackstrap is not very sweet (it’s different than standard grocery-store molasses), and it has a lot of minerals in it including Iron. I decided to try to add it to my diet and this was an easy way.
I’m happy you found a new food, or rather a food in a new way that you enjoy. What a lovely discovery!

gorgeous pic. it’s one of my fav veggies. we eat it at least once a week.
I never cease to wonder at the contrast between the pale, cream coloured sweet potatoes we get here in India and how vibrant and orange they are in the US! The outside is pink, though.
I love sweet potatoes. And this recipe looks especially good.

Oh, yum! I just bought some sweet potatoes today, and we are grilling tomorrow–I’m going to try this wrapped in foil on the grill!

I’ve always loved them – but just baked, not with all the sweet goo… This winter I just sliced them and fried them in olive oil – they were great. I’ll try this – when I have an oven again.
Paz, try baking kumara (just another name for them) with a good sprinkling of dried rosemary, if you have nothing else on hand. Makes the kitchen smell divine!! I did this tonight.
I love, love roasted sweet potatoes.I usually roast chicken with potatoes , sweet potatoes and butternut squash …yummmy

I feel the same about sweet potatoes. I really only like them in a savory way.
Try using cold roasted sweet potatoes in a salad with olives, feta, tomatoes and basil. SO GOOD!
I’ve only ever roasted the white variety of sweet potatoes that we get here but when I go to the US, I will definitely give this a try.
Was never a fan of them either until I had them simple like this. So healthy and good.
