Hi Olufunmilayo: Well, if you wanted to cook more rice -- 4 cups instead of one, then you have to obviously double the water. If you're starting out, I'd suggest starting small and ending large. First learn how to cook a small amount, like the one cup of rice. And once you get comfortable, you can experiment with making a larger quantity. I'm sure your husband is right that you're a great cook. Thanks for stopping by and happy cooking! ;-)

I'm curious about this recipe, the only time I've ever made Jollof rice(my husband's Nigerian) we used a lot more rice. For example 4 cups of rice instead of only one, he's pretty much an expert cook whereas I'm just learning. Was wondering how I would need to modify the recipe to cover that amount of rice, true when it was made we only used onions and tomatoes and only chicken. Trying to learn how to cook African food ah! I thought I could cook, but when I met my husband that idea went out the window lol (although he says I'm a great cook and will eat anything I make...however I don't want to risk giving him food poisoning(j/p))
